Defines base BootEnv to override in the create Pipeline Profiles

Defines the ESXi base BootEnv to use for the Pipeline Profile override. This is expressed as the bootenv-customize Param in the Pipeline Profile, and also define as the vwmare/esxi-version-override.

The base BootEnv that is being overriden must have the right boot environment information to successfully install the major version of ESXi.

By default this value is set to esxi8-install. Presumably for ESXi 9, this might be a value like esxi9-install. For ESXi 7, use the value esxi-install.

A matching Universal Application (Pipeline) profile must also exist with the name format universal-application-{bootenv-override} (eg universal-application-esxi8-install.
